The market is of course driven by the consumer, but the big supermarkets have long used their buying power to demand ever lower prices for their milk, leaving dairies to make a loss. Indeed, the farm on which I spent the week, near Chester, gets less per pint of milk than it costs to feed and keep the cattle.
